When it comes to cooking, things can get a little boring. Sometimes we stay in the same routine Monday through Sunday and never step out our comfort zone. Well that’s a habit I try to break often! So what was my change? Fish! Pollock to be exact. I love shopping at Aldi grocery store and they have a decent frozen section. The one thing I had not tried was Pollock Fish, so literally for 2 months off and on I have been trying out how to cook this fish well!

Beans and rice! It’s simple and delicious and depending on the bean can be time consuming. That’s why my beans and rice are what I call untraditional! As many know, I love lentils for healthy eating, and they are the near perfect quick cooking bean I have found, you don’t even have to soak them! Only thing I noticed is that they will soak up all the water! Then what to do? Make a sauce or use your favorite! So for all who came from Instagram @clynnsart (follow) wanting to know what is the sauce... Pasta Sauce! Yes it’s not just for noodles π! As I have shared before here and on my YouTube channel C.LynnsArt of Cooking (subscribe) tomato pasta sauce can add so much flavor to your meals and it’s also easy to make from scratch.
Simple Eaters don’t allow stress and lack of time to prevent you from eating healthy! By keeping a jar of this, a frozen bag of that, a box full of this in your cabinet or refrigerator you can eat quickly and healthy, Happy Eating!

It’s zucchini spirals to the noodle rescue! Yes these are not new by any means but I recently in the past year have gotten into them. In the past month I was shopping at Aldi (my favorite grocery store) and seen them for the first time there and had to buy a few boxes! I enjoy these because it replaces noodles especially for gluten free eaters or if you want a change in your meals. I mixed mine with a variety of vegetables and seasonings.

Recently I wanted some oatmeal cookies and it occurred to me that it may be possible to use instant oatmeal that I would use for breakfast as the cookie mix! Well of course I immediately got one with chocolate in it and on my griddle made these delicious oatmeal cookies so fast that it’s a regular habit now.

I eat tortillas and or tortillas chips weekly because they are gluten free. So when I seen a big bag of corn flour, it occurred to me I can make my own... eventually! So I bought it, it sat around for almost a month, then my bag of tortillas was at the end and I knew, I got to figure this out! I don’t like wasting money so no more bags of tortillas of any kind are being bought until this flour is gone.

When cooking I go for simple and filling! This meal took under a half hour. Lentils do not need to be soaked to cook, but if you do it cuts down the cook time, follow directions on the bag for new cooks. I used frozen peas, carrots and brussel sprouts so once they are rinsed thoroughly they are good to go in about a half cup of water on medium till tender then turn off. As many of us know, if you don’t eat meat you need to get your protein from beans, nuts and so on. So I really liked the small hand size pouch of pistachios so when I was shopping and seen a huge bag I thought...This is great. I am getting more for a better price and this can add to my protein because I do go meatless often for long stretches of time. So overnight I went from having 3-7 nuts from a small pouch trying to make it last, for two weeks to having a handful 50+ more daily. Great increase in my protein right?! Yet after about a week I didn’t feel good, not like sick with a cold but like, I am cramping and my period is not due! So automatically I know my body, which I tell anyone who asks me about health, get to know you body intricately. Meaning understand what makes you tic, the good ,bad and ugly when it comes to food and people. I immediately started tracing my eating habits for the last two weeks because I had been buying new items to try from Big Lot’s, it has some good gluten free items and I went overboard so I checked that first, to see that food haul on my YouTube channel C.LynnsArt of Cooking watch here https://youtu.be/viTN01PRoEc To get to the point nuts can raise your estrogen levels! The pistachios were the only thing that I had eaten an increase of, so I was not new to this because I had this happen with broccoli so I started researching it...and it’s TRUE go figure they are the richest source of phytoestrogens among nuts do your own research but it let me know to eat these sparingly. I already have enough estrogen and can get quickly overboard so I know my body and I listen as much as possible because who wants to π feel bad regularly. Comment below if you have had a similar experience.
